BEAN SPROUT, PEANUT SALAD WITH OLIVES AND CHERRY TOMATOES

1	Beans sprout	100	gm
2	Boiled Peanut	50	gm
3	Red Capsicum Juliennes	1	No
4	Mix of Black olive(sliced) and Cherry tomatoes(halved)	10	no’s each
5	Arugula lettuce	1	Bunch used as a base.
For Dressing
6	Olive oil	40	ml
7	White Vinegar	30	ml
8	Salt	to taste
9	Mustard paste	1 tspn
10	Crushed black pepper	1 tspn

METHOD:

* Make a dressing out of Olive oil, White Vinegar, Mustard paste, Crushed black pepper and salt and keep it a side.

* Mix all the vegetables, peanut and cherry tomatoes with the dressing.

* Garnish with sliced black olives, Serve in room temperature.

Parsley Mayonnaise

PARSLEY MAYONNAISE

COLOUR: Light green

1	Parsley	100	gm
2	Garlic	20	gm
3	Mayonnaise	200	gm
4	Olive oil	25	ml

METHOD:

* Wash the fresh parsley. Rinse the parsley nicely to make sure it’s free from water.

* Grind the parsley along with garlic and olive oil, make a paste out of that, keep a side.

* Take mayonnaise in a big bowl (You can purchase packet mayonnaise as shown in the picture.

* Mix Mayonnaise and Parsley paste nicely.

* Serve cold along with hot snacks like French fries, potato wedges, Chips etc.
